I received a solicitation today from a site that appears to be legit. As part of their affiliate program, they said that they'd require my Google AdSense Publisher ID. Is this information that I should be giving out?

I'd be hesitant - ask them why. If it is in order to serve up ads where revenue accrues to you then that might be OK - but they could also ruin your rating with Google by doing something against the rules - even if it is on your behalf.
If they don't have the password you are probably OK, but I would check - maybe even with Google
I got an affiliate program request of a similar kind. Although they said on their website that doing this is okay, they'd let people know if google has a problem with it. It just didn't sound right so I'm a little skeptical. But it's always good to hear a few more opinions before I establish my stand.
I always err on the side of caution. I agree with Owen here - I'd contact Google and see what they had to say.
Cheers!
